Pancakes with coconut stuffing ( Dadar gulung)


Pandan
leaves (screwpine pandanus), easily available in Asian supermarket.
Smells like Vanilla.



Pancakes with coconut stuffing ( Dadar gulung)

Dadar gulung is Indonesian's desert that is super delicious & easy to make.

Pancakes with coconut stuffing ( Dadar gulung):

Pancake :
3 pandan leaves (screw pine leaves) can be substitute with vanilla essence
150 gr flour
250 ml coconut milk + 1/4 cup water
2 drops of oil
1 egg

Blend pandan leaves with water in food processor until the water turn green color,
strain. Add the rest of the ingredients, blend really well.
Heat nonstick pan, spray with oil.
Ladle 1 big spoon of batter, and fry the omelet.

Stuffing :
100 gr dessicated coconut flakes
1 block gula jawa** ( 1/4 cup brown sugar)
1/2 cup water
 
Cook all the ingredients until the coconut turn brown. Set aside to cool.

To assemble, put a heap tablespoon of stuffing in the middle of a pancake & wrap it like a package.
** Gula Jawa is Indonesian brown sugar that are made out of coconut.
   Smells very fragrant when cooked.

Stir fry Kailan (Gailan) with fish sauce


Here is what we are having tonite :

Stir fry Kailan or Gailan with fish sauce

1 bunch of Kailan vegetables (can be substitute with baby Bak Choy)
2 cloves of finely minced garlic
1 Tbsp fish sauce
2 Tbsp sesame oil or olive oil
Pepper to taste

Washed & cleaned Kailan, cut into bite size.
Heat nonstick pan, put oil.
Stir fry garlic until they are fragrant.
Put in the veggie, add fish sauce & pepper.
Stir fry until veggie is tender.
Serve with hot jasmine rice.

Mushroom rice


Here's what we had last night : Mushrooms rice.
One of hubby's favorite, he sure can eat alot of this.

Mushrooms rice
2 cups uncooked rice
4 pcs dried shitake mushrooms
2 cloves of garlic (finely minced)
1" ginger (finely minced)
2 Tbsp fish sauce
1 cube vegetable/beef bouilion
1 Tbsp sesame oil
1 Tbsp olive oil
pepper to taste
Water

Soak the dried shitake mushrooms in lots of water for 40 mins.
Drain & reserved & strain the water to cook the rice !
Sautee the ginger, garlic with  both oils
Wait until it's fragrant, put in mushrooms then cleaned rice,
sauteed 3 mins more, add fish sauce & pepper.
Put the reserved water & cook rice on medium heat until it's done.
(or put in the rice cooker). Served hot.

Usually I used 2.5 - 3 cups of water for 2 cups of rice.

Fasnacht Carnaval Basel, Switzerland














Fasnacht is the famous costume carnaval in Swiss.
To celebrate it, they customized their costume in
a very unique way, some are amazing and others
are a bit hard on the eyes.
This carnaval lasted three days and usually start
in February. By the end of the day, 
the street are usually covered by oranges, confetti,
candies and sometimes flowers.
The music are very uplifting, and cheerful.

Our wonderful trip to Zermatt, Switzerland







Last December, we decided to take a ski lessons
in Zermatt, Switzerland.
It was a five days lessons in a cold December weather
where the temperature up there was about -28 celcius
on daytime.
What a week, whew !

Lugano, Switzerland







Last week, we went to Lugano for couple of days.
What a wonderful choice !
The place is so tropical, really gorgeous. The lake is breathtaking along
with their beautiful building & churches, and not to mention
their delicious foods ( we felt like we were in Italy).
